Parboiled rice, also known as converted rice, is partially boiled in its husk before being processed. This method involves soaking, steaming, and drying the rice, which helps lock more nutrients from the bran into the kernel. As a result, parboiled rice contains more vitamins and minerals than regular white rice. It has a firmer texture and is less sticky when cooked, making it popular in many recipes. Additionally, parboiled rice has a lower glycemic index, meaning it raises blood sugar levels more slowly, making it a healthier option for diabetics or those trying to control blood sugar.
