Avocado oil is extracted from the pulp of the avocado fruit (Persea Americana). It is used as an edible oil ? raw and for cooking and is noted for its exceptionally high smoke point (250 ?C (482 ?F) and enviable nutrient content. Indeed, from a nutritional standpoint, avocado oil is loaded with omega-3 fatty acids, vitamins A, D, and E, chlorophyll, carotenoids, and numerous powerful antioxidants. In addition, almost 70% of the oil consists of oleic acid - a monounsaturated omega-9 fatty acid.
