Erythritol is a naturally-occurring organic compound of sugar alcohol (or polyol) that is widely used as a sugar substitute. Small quantities can be naturally found in fruits and mushrooms and can also be made from corn using enzymes and fermentation. Erythritol cannot be metabolized by the body and is the sugar substitute with the lowest calorie content of all sugar alcohols.
