A proofing basket, sometimes called a banneton or brotform depending on who you’re talking to, is basically a bowl-shaped container that holds your dough while it does its final rise before baking. Most are made from natural cane or rattan, though you’ll also find ones lined with linen cloth, and cheaper plastic versions too. The whole point of using proofing baskets is to give your loaf something to lean on.
