Granite's surface can be used to cut food because it is scratch-resistant. Its heat resistance is also impressive, as you can safely place a pan or pot directly from the stove or oven on top of it. Heavy-use granite countertops, on the other hand, are prone to flaking and busting over time. Acidic components such as vinegar and lemon juice can stain it, which is why it needs to be reclosed every 6 to 12 months to keep it stain-free.
