For centuries, Traditional Chinese Medicine or TCM practitioners have known and used red yeast rice. They have been fermenting white rice with a type of yeast called 'Monascus purpureus”. During this fermentation process, this yeast turns the white rice into a distinctive red colour. The active compound produced is “Monacolin K”. This compound is chemically the same as lovastatin, drug that is widely used for lowering cholesterol.
