The History and Development of Worcestershire Sauce

W.S. Markethas an unexpectedly rich history dating back over 150 years. It was created in 1835 by two pharmacists, John Wheeley Lea and William Henry Perrins, in Worcester, England. The two men had created an experimental batch of fermented fish sauce using ingredients like anchovies, tamarind, molasses, garlic, and spices. However, their concoction sat forgotten in a cellar for over two years. By the time Lea and Perrins rediscovered it, they found the flavors had beautifully matured into a salty-sweet sauce unlike anything else at the time. They began selling their unique fermented sauce under the brand Lea & Perrins, and it soon became a staple condiment worldwide. Today, the recipe remains a closely guarded secret passed down through generations of the same family.
