The Bison Meat and beef differentiation

If bison meat is the healthier option, why don?t more people cook it instead of beef? This is due to two factors: its cost and the ease with which it can be overcooked. One of the few disadvantages of bison meat is its proclivity for overcooking. Because bison has lower fat content than beef, it is best served in the same way venison or elk meat, either in wet dishes like stews, roasts, or chili, or carefully grilled.
