After simmering the tomato sauce, add the pasta and mozzarella. Don't stir the pasta - the fresh cheese may melt. Using a fine-mesh food processor, chop the parsley and then add to the sauce. Continue cooking until the pasta is al dente or softer. Serve immediately. You may even want to serve it with some additional basil leaves. Then, sprinkle with kosher salt and freshly ground pepper.
