Gum Arabic (GA) is made up of polysaccharides and glycoproteins (GPs), which give it glue and binding capabilities. In icing, fillings, chewing gum, and other confectionary delicacies, GA is employed as an emulsifier and thickening ingredient. GA was more effective at preventing nonenzymatic browning and preserving the colour of dried tomatoes.
