Going solo: a chefs who work on their own

P Franco is a booze emporium and bar in easterly London that has been home to a array of proprietor chefs. It�s a tiny room, usually 16 seats, 12 of them around a community table. At a distant finish of a list is a sink, and behind it is a tiny bit of workspace. That�s been my kitchen given September, when we started my six-month residency. There�s no oven, no fryer, usually 3 electric initiation hobs and dual fridges � it�s utterly challenging.
