Most tequila is 80 proofs, but some do fall between 70 and 110 proof. Tequila is an offspring of an indigenous fermented beverage called pulque. Pulque is a short lived, somewhat slimy beverage produced by fermenting the juice of the agave. It has an average shelf life of three days. Preferring tequilas should be made using copper pot stills.
