Bromelain is an enzyme which is extracted from the stem of pineapple, also present in fresh pineapples. It belongs to family Bromeliaceae. It is otherwise known as fruit bromelain and stem bromelain. It is white to tan powder, soluble in water. Bromelain extract is a mixture of protein digesting enzyme or protease.
