Create a centralized wall of taps that allow any patron in the entire establishment to pour their own by purchasing a beer card. Issue pre or post-pay beer cards and customers have the chance to try as little as they want of a beer and their tasting pours will automatically be added to their tab. Since you are charging by the ounce it isn't a problem if someone tries 1 ounce of 10 different beers or 4 ounces of 5 different beers; either way, their tab will reflect exactly what they poured and how much.
