Acidity regulators, also known as pH controllers, are popular food additives that are used to alter or change the normal pH level of a food material to make it more appetizing. They may be organic compounds, alkaline salts, alkaline buffers, base salts, or neutralizing salts. Typical organic compounds contained in these additives include lactic acid, glycerol, tartaric acid, monosodium glutamate (MSG), and polyacrylamide (PA). These additives are generally used in sauces, fruit juices, milk products, vegetables, dry mixes, breads, dried mixes, ready-to-eat cereals, snack foods, fried foods, pickles, sauces, and other food forms.
